MS seems to retain all earlier versions of the .Net Framework when it install a new one. Mine show 1.1; 1.1 Hotfix; 2.0 SP1; 3.0 SP1; and 3.5.
Is there any reason I need to keep anything except the most recent version installed?

If they're not broken, don't fix them. A lot of older apps will not recognize newer versions of the framework, and even if they do a lot are more compatible with the framework version that they were designed to be used alongside.
