Does your firm not have backup measures in place?

If the user profile is not visible in Documents and Settings then you will not be able to recover any .pst files without file recovery software or restoration of the appropriate backup.

If it is available then you can find the .pst files in c:\Documents and Settings\<username>\Local Settings\Application Data\Microsoft\Outlook\
