Default BIOS OC options "greyed" out

Hi there, pretty new to these forums and i have been trying to find help with this issue everywhere.
Im running a MSI P965 platinum Mb i have read that the most stable method of OC is in the bios, ofc i used this same method in an old system of mine and it was fine.
Although my options to change the FSB etc are greyed out in the bios, now i kinda gave in and admitted defeat and thought "what the heck" ill just use my dual core centre software which i downloaded from the msi site, with no prevail, in fact it doesnt work at all it freezes and i have to do a hard restart.
this software makes me uneasy tbh and i would love it if somehow i could sort out this issue within my bios.

my pc specs are updated now like i said im new here and a little of a "noob" when it comes to certain pc issues i hope i can be educated to a certain point here.
