Default To(2) GTS Or GTX "That is the question"

Hey all, currently i have a inno3d 320mb OC'd 8800 GTS. now my mental problem being, should i go with 2 of the current card or a single gtx? what would be better?
I want to have a dedicated (stable) gaming rig, that i can walk into my computer room at any time and load a new game and click all graphics to full and still have fps to spare. and next week hopefully ill have a new screen an Asus 22" VW222, nice screen, apparently has a resolution of 1600x1200 (i think), so the graphics cards have to be able to run full at these types of resolutions.. also to help things along im thinking of a physX card as well.

two gts's add up to round about (where i get my stuff) $720aud and one gtx will run me about $800aud for an oc'd version.

whats best ppl.?

plus id love to water cool my gpu, does that void warranty? can i cool all the memory as well with a waterblock? would watercooling the gts take the temps down, current running temps are 61 to 69degree's..

anyways thanks for reading please lemme know your thoughts an opinions.

Or ditch the GTS and go with 2 of the new inno3d 8800GT's?

of course two gtx would be the best option, but in case you don't have $800 lying around two gts set up in sli will kick the **** out of a single gtx. Really with a single 8800 you should be good to go playing most games. Maybe not at max settings, but still...

Also I use a 8600 card and have no problems playing most games even on a 52" hd tv.
