Default Good Audio Recording software

Hey, I'm off to Uni in September, I'm very dyslexic and am getting a helper and laptop. What I'm after is some good audio recording software that will let me record lectures so I can follow what's going on when looking back at my helpers notes?
Money is not an issue, but it MUST be able to record for hours without haveing to restart it. and be save-able as MP3 format so I can save it onto my I pod.

I agree with Bills on Audacity and its a fantastic program considering its free, I have used it for recording Music demos on and its cracking
