Hi Gaz
First of all download yamipod from yamipod.com :: INDEX ::
Now connect your iPod to the computer and open yamipod.exe
Let it find your iPod, then a list of all the songs on your iPod should appear.
At the top of the yamipod window, click Song then select all
Then with everything highlighted click song again and then Copy To...
Now a new window will appear, for the destination path select Artist/Album/Disc
For the filename leave it as it is.
And leave If Duplicated as it is.
Then click the destination button and pick the folder you want everything to be copied to!

Once done, navigate to where you selected and all the songs should be neatly organised in Artists and then album folders
I hope you understood all that

You have to do that because you are not really suppose to be doing that, but it's cool i guess if you own the music.
Also, if you have any purchased music, you will likely have to reauthorize the computer.
